Peach Hamilton Pudding Tart

Hamilton Pudding is an old school dessert, rarely seen due to its simplicity. It is classically apricot jam covered by a cakelike batter, then baked to a pudding-like consistency. But with ours, it is also topped with peaches to bring even more stonefruit flavours to the table. Classics elevated.
